-1 package with Kombucha mushroom (Scoby) stabilized for ambient temperature, certified organic

1 envelope with 100g certified organic sugar

1 bag of certified organic green tea

Here's a simple kombucha recipe for you:

Ingredients:

  • 1 gallon of water
  • 1 cup of sugar
  • 4-6 bags of black or green tea
  • 2 cups of starter tea (store-bought unflavored kombucha works well)
  • 1 SCOBY (symbiotic culture of bacteria and yeast)

Instructions:

  1. Boil the water and dissolve the sugar in it.
  2. Add the tea bags and allow them to steep until the water has cooled to room temperature.
  3. Remove the tea bags and stir in the starter tea.
  4. Pour the mixture into a clean glass container, leaving some room at the top.
  5. Gently place the SCOBY on top of the liquid.
  6. Cover the container with a clean cloth and secure it with a rubber band.
  7. Store the container in a warm, dark place for 7-14 days, tasting periodically until it reaches your desired level of fermentation.
  8. Once fermented, carefully remove the SCOBY and bottle the kombucha, leaving some liquid to use as starter tea for your next batch.
  9. Refrigerate the bottled kombucha to slow down fermentation and enjoy!

Make sure you have all necessary ingredients:

  • 1 SCOBY (symbiotic culture of bacteria and yeast)
  • 1 cup of white sugar
  • 4-6 bags of black or green tea
  • 1 gallon of water
  • 1 cup of starter tea (previously brewed kombucha)

First Steps

  1. Boil 4 cups of water and steep the tea bags for about 10-15 minutes.
  2. Remove the tea bags and stir in the sugar until dissolved.
  3. Add the remaining water to cool down the tea mixture to room temperature.
  4. Pour the tea mixture into a large, clean glass jar and add the SCOBY and starter tea.
  5. Cover the jar with a clean cloth and secure it with a rubber band.
  6. Let the kombucha ferment for 7-10 days in a warm, dark place, away from direct sunlight.
  7. After 7-10 days, taste the kombucha. If it's too sweet, let it ferment for a few more days. If it's too sour, it's ready to be bottled.
  8. Remove the SCOBY and reserve it for the next batch.
  9. Bottle the kombucha in airtight containers, leaving some space at the top.
  10. Let the bottled kombucha sit at room temperature for 2-3 days to carbonate.
  11. Refrigerate the kombucha before serving.

When it is ready?

  1. Taste Test: The best way to know if your kombucha is ready is to taste it. Use a clean straw to take a small sample from the liquid just below the surface. If it tastes slightly tangy and a bit fizzy, it's likely ready. If it's too sweet, let it ferment for a few more days. If it's too sour, it's ready to be bottled.
  2. pH Testing: You can use pH strips to test the acidity of your kombucha. A pH between 2.5 and 3.5 is generally a good indicator that the fermentation process is complete.
  3. Visual Cues: Look at the color of the kombucha. It should be lighter than the original tea and may have a brown string-like formation — a new SCOBY forming on the surface is also a good sign that fermentation is happening.
  4. Carbonation: If you see bubbles rising to the surface when you press lightly on the bottle, it's a sign that carbonation is building up, indicating the kombucha is ready to be refrigerated.

Remember, the fermentation time can vary depending on factors like temperature, the strength of your SCOBY, and personal taste preferences. It's a bit of trial and error, so feel free to experiment and find the perfect fermenting time for your taste!
